.An ode to two of our favourite grape varieties and the opening words of a Tom Waits song. Seemed apt given the histories of the varieties and that for so long they played second fiddle to the more famous Pinot Noir and Chardonnay. This year we went 50/50 with the blend but wanted to dial it up a little. The Gamay saw more time on skins as we wanted to chase some red fruits both on the palate and aromatically. I like phenolics in red sparkling wine so time on skins is never a problem. I didn't want the wine to be just fruity and simple.
