This is the third release of our Aligoté Crémant. Both the Aligoté and Gamay are off John Darling's vineyard at Whitfield in the King Valley. These are ancient volcanic soils that are well suited to sparkling wine production. Made using methode traditionelle however we have backed off the pressure just a touch in the true crémant style. Base wine was natural ferment in old oak with no additions, disgorged with no dosage. The wine has spent 36 months on lees before being disgorged in April 2021.
